Duck breast a la mandarin with beetroot couscous

After a dissapointing days' dining in the Southern Highlands we decided to call in to the "Hot Canary" butchery in Bowral. We ended up with a couple of duck breasts. The plan for dinner was hatched and once home, I perused our orchard, happily finding ripe mandarins in plentiful supply, I found some beetroot in the vege garden and also some broccolini and carrots. Here is the result.
I enjoyed a Sierra Nevada "Torpedo" extra IPA beer with this. The beer was certainly not a great match but is a fantastic drop and I shall review it seperately.
Princess enjoyed a Clover Hill Brut Rose which is a buttery strawberry front of palate experience able to be better matched for sure, but not bad as a quick quaff from the wine cabinet.
